主要涉及食品的微生物制造与新资源食品的功能研究，立足于分子生物学、合成生物学与食品科学等的交叉学科研究，课题包括母乳低聚糖的合成制备、母婴益生菌的筛选鉴定、益生菌的功能和特性研究以及母乳低聚糖和肠道菌群互作抵御食源性致病菌侵染的作用及机制研究。
